This Week...

Good morning! How was your weekend? How are things looking for you in your little corner of the world this week?

The weather... The forecast for this week says it will be in the mid to upper eighties, bright and sunny, no rain. Sadly, it looks like our days of having the windows and doors open, and cheap electricity bills are done and over with for this year.

How I'm feeling... Productive. I managed to get almost all the dreaded paperwork done over the weekend. I still have a little more to do and have the phone calls to make today. I'm really hoping the calls won't lead to additional paperwork and unavoidable errands, but I can almost guarantee they will.

What's for breakfast... Berry banana fruit smoothies for this week.

What I'm reading... I have this stack right next to me ready and waiting for me to get started on.

On my TV... The only show I watch regularly is Grey's Anatomy. When I have TV on otherwise it's usually on Food Network. I do flip on the news for a bit most days, but thankfully feel no need to to have it on day and night like I did last year.

On the menu... I haven't done my usual menu planning the last two weeks. We were using up precooked meals I had in the freezer. I had a pan of baked ziti, some chili, Italian meatballs, and a shelf of individual meals that were packed from leftovers over the last couple of months. I reserved a couple of the individual meals for after our vaccines this week just in case I don't feel like cooking.

Last night our boys got together for dinner and very thoughtfully decided to include us. They brought over some fantastic pressed Cuban sandwiches from a new local place they recently discovered. The sandwiches are so good and unbelievably huge. I was only able to eat a quarter of mine for dinner - that's how big they are! The hubs made it through half of his and then complained all evening about being miserably full. We obviously have plenty leftover for tonight.

The plan for the rest of the week...

Tuesday - Italian chicken cutlets, garlic parmesan couscous, roasted asparagus
Wednesday - Applebee's Copycat Oriental Chicken Salad (using leftover chicken)
Thursday - Honey Garlic Shrimp and Veggie Stir Fry
Friday - Leftovers 
Saturday - Individual freezer meals

Looking around the house... It's neat and tidy. My sweet kitty Nuggy boy is asleep under my desk, old man Beefy is sleeping on his little bed next to me. The other old man in the house is in the next room watching TV, and of course he has it on way too loud as usual *sigh* 

To relax this week... I'll read blogs of course, and I'll probably get started on my book stack after getting my vaccine. My plan is to just take it easy for a day or two afterwards and get a head start on the Bout of Books Read-a thon.

  3. I had an egg w/cheese on a whole grain english muffin for breakfast.. the smoothie sounds good too. do you put protein powder in them? what kind? beautiful sunset, good luck with your calls today. yep, we have our AC on now, bye bye breezes through the house

    1. Thanks Sandra. We got lucky with more mild weather this year than we usually have, but I am going to miss those cooler days. I use Greek yogurt in my smoothies for a little extra protein. I only use protein powder if I'm doing weight workouts. I'll get back to those in the summer. :)

  5. Ir aounsa like you are off to a great start to your week. I like your menu plan. It's good to get rid of things in the freezer now and then to make room for more. Mine is presently full as it can get. So I guees I need to eat from my freezer too. We had an 80 degree yesterday but today cooling off. No A/C needed here yet but even when it does come on it won't make a big difference in my bill. We don't get very many hot hot days here. Have a wonderful week ahead!

    1. Thanks Ma. I don't like to keep cooked food in there too long, it starts getting freezer burned otherwise. Plus a lot was heavier foods that we won't want during the sweltering summer heat. We'll be working on the frozen meat next to clear it out before hurricane season arrives. Our electricity bill ran around $100 through winter and the beginning of spring, it will get up close to $300 by summertime - ouch! I hope you have a great week too. :)

  7. That is a gorgeous sky! I’m waiting for the guy to come install my new dishwasher today. We are having shrimp bowls tonight. My son and his wife are going to come stay with us this weekend for Mother’s Day. I love the looks of your book stack. I’m reading ‘What You Wish For’ by Katherine Center right now.

  8. I don't know which vaccine you're getting but we were miserable the day after ours. It wasn't long lived though and now that's all behind us and we look forward to a fun summer!

  10. Lovely FLA sunset. It's rainy and gloomy here in NEO after a beautiful sunny day yesterday with temps in the low 80s.

    It's okay--I really need to catch up on inside stuff like laundry, emails, changing bed linens. Such thrills!

  14. GORGEOUS sunset shot! I always telling people that "the most" beautiful sunsets are the ones I witnessed when I lived in Florida.

    Aren't Cuban sandwiches deeeeelicious? One of my faves.

    Lately, I've been streaming episodes from the HBO series, "Six Feet Under." I used to watch it was first aired in 2001. I forgot just how incredible that show was. It was one-of-a-kind!

      A good Cuban sandwich is a favorite of mine too, but until now we had to wait until we went to Tampa or across to Miami to get a good one. I'm thrilled that we can get good authentic ones here now.

  18. Gorgeous sunset colors.
    I have yet to read anything by Colleen Hoover.. everyone keeps raving about her, I have considered it a few times but always feel that I won't like her work and then be disappointed.
    I stopped watching Grey's a couple years ago.. mainly when the original cast dwindled and new people came on board.

    1. Thank you! I haven't read any of her books yet either. I thought I'd give it a try. I'll let you know what I think about it. I had stopped watching Grey's years ago too. It went downhill after Shonda Rhimes left. When the pandemic came along a friend suggested we binge watch from the beginning just for something to do with ourselves. Now that I did that I don't want to miss what is probably the final season.

  19. Sounds like a good week ahead! We had a nice warm weekend and now it's chilly again! We had our second vaccine last Monday. Only side effect was fatigue and that was mild and gone within a day!

  20. My mom (RIP) used to have on the Food Network during the day. I have an Amazon Firestick so I usually have some sort of YouTube video playing in the background, as I go about my day. Sometimes I have a "nature sounds" CD playing instead. It seems I have to have some sort of noise. I wonder if that's a good thing or not? Have a great week!! ~Andrea xoxo

  30. I watch Grey's Anatomy too but I don't think it's as good as it used to be.
    When I used to watch tv with my husband he had great hearing, I didn't so I couldn't hear it when he turned it on. I got headphones to watch tv with so that he could keep the volume where he liked it and I could hear too. Now I can turn the tv up as loud as I want but I still use the headphones because I'm used to them

  34. Wow. That Floridian sunset is to 'die for'. I noticed today while out and about that at least it's started to look green here...at last.

    Your already prepared meals are perfect. We will do some of the same. Too hot to cook. 88°, but the humidity right now (Lots of rain over the weekend) makes it feel 188°!!! I can hear the electric meter whirring...power company bill "ka-ching" Lol

    I love that you do meal planning. As organized as I am, that is one thing I'm never good at.
    So nice to have someone bring you dinner, your boys sound wonderful as do the Cuban Sammies.
    Men who can't hear is a universal complaint. Right?

    1. I bet that meter is spinning round and round at high speed today, real feel is 98 here. I guess our summer has arrived - ugh!

      I started menu planning out of necessity back when my kids were young and I worked full time and have just always stuck with it. I feel like I save a lot on groceries when I menu plan too since I usually plan around what I have on hand and what's on sale.

      I'm a lucky momma to have such sweet grown up boys and my husband is getting so bad with his hearing that he's getting comical. Just recently I cooked something and he asked which one was his. I said take your pick. He thought I called him a d*ck. I'm still cracking up over that one. I might have to start making the things he says a feature on my blog! :D

  38. Your weather sounds like a 'cc' of ours, minus the tornado watch. So far, I've resisted turning on the central a/c, but not sure how much longer I can hold out. Plus, one of my friends hosted a brunch this morning --and hours later I'm like your hubby, "I ate too much!" Those pressed Cubans sound wonderful; I really miss the REAL Cuban coffee I used to get in Tampa.

    1. I had to turn ours back on. Our real feel here to day is 98 degrees. Summer weather is back for us for a long time to come. These pressed Cubans are so good. I'm so excited to have a good local authentic place now. Normally we had to wait until we were up in Tampa or over in Fort Lauderdale to get good ones. This place has the coffee too, we'll definitely be giving that a try as well! I hope you're not still uncomfortably full, it is a yucky feeling. Have a great week Myra. :)

  42. That Sunset is Sublime... we get a lot of Gorgeous Sunsets in the Desert too. I envy you have a Tidy Home right now... I'm slowly but surely getting there, Princess T assisted me the other Day, but I couldn't Focus and so I was rather like Herding Cats for her. *LOL* Her Organizational Skills far exceed mine, which is why I solicited her help, but I think I got in the way of her progress or it would have been done by now. *Smiles* Smoothies sound good, you read a lot, I have one interesting Book I might get thru in about a Month... about some conjoined Twin Slaves from the 1800's named Millie-Christine, fascinating Life they had, good Read, but I'm not much of a Reader. On TV I've been watching a lot of Ghost Hunting and Bigfoot Hunting Shows... I know... how I've devolved while in Lockdown is sometimes hilarious. Our weather keeps swinging between inclement Storms cooling everything off by 40 degrees, and it trying to get to triple digit temperatures.

    1. Believe me, my storage room isn't neat and tidy. I know we've both been working on the same situation with that. I did read your post about Princess T helping you the other day. Maybe you should just go do something else and let her get the job done. I haven't read a book since last March but once I get started I'm a marathon reader. I can't read books a few pages at a time. For me it's either do nothing but read or don't read at all. I've watched both of those shows too lol. I also know how the desert temps can be, my son lived in New Mexico for a few years.   44. I really enjoyed ‘Love Walked In’ when I read it years ago, I hope you enjoy it as well! It’s 90 here right now. Blah. It’s going to cool off a bit over the next few days, so we can live with that.

    The sunset picture is indeed lovely. I havre had a very busy few days...Friday I helped a friend clean out her parents’ storage space, she lost both of them in just a few months. Saturday I had a stupid sinus headache and errands to run, but then went to a small Kentucky Derby party, which was just us and another fully vaccinated couple, but it was great to get together after so long apart. Sunday was a small family party here at our house, everyone fully vaccinated. It was great to have people here and feel almost normal. Bonus is that in preparation for having people over, the house is very clean. Today we went on a little hike in the Marin Headlands, just north of the Golden Gate Bridge. I’ll tell you, I’m ready to go back to work tomorrow and relax!

    1. I'm so happy to hear you've been able to start socializing a bit again! I'm looking forward to getting through this second vaccine and the two week wait to be able to have my own grown children back in the house and a few friends here and there too.

      It was 88 here today but with our high Florida humidity at 80% our real feel was 98 degrees. Summer has arrived and is here to stay until at least November. I want to be a snowbird and have somewhere else to live during our 6-8 month summers!

    1. Thanks GM! It is really hot here most of the year. I'm getting too old to be here year round. Once we get the high eighties I stay indoors like people up north do in the winters. I just can't handle that kind of heat anymore!

      Keeping my fingers crossed with the vaccine. I'm sure I'll survive with any side effects, but it will be really great to have it behind me.

  50. What a gorgeous sunset! I miss the beach, we are finally getting to head towards the panhandle of Florida for the first time in years in a few weeks and I can't wait to enjoy the sunsets over the Gulf.

    What a beautiful sunset, gorgeous end to your day. I watch some shows on the Food Network too, lately they show a lot of reruns. You have to pay for the new shows on the Discovery Plus network, I am not paying more per month. Your menu sounds great, I would like to try the Honey Garlic Shrimp, yum.   61. Such a pretty sunset! Hope your vaccinations cause you no problems. i am so happy to be done with them! I made Chicken enchiladas...bake chicken, shred the meat add one can Cream of chicken soup and a small container of sour cream...use a 9 x 12 baking dish. Butter the bottom! Take soft taco shells and put some of the chicken mixture inside roll up and put in pan...fill the pan top with cheese I use cojack, Bake for about 45 minutes at 350 or so:) It freezes well:)

  67. I am happy for you to have dealt with paperwork and calls. Have you ever noticed that mail that is upsetting always comes late friday, till you have to worry all weekend before you can call and deal with it?

    The sandwiches sound wonderful!
