It's so nice to get back to menu planning this week! My fridge and freezer are so empty now between having to throw away everything in the old fridge and using up all the meals I had stored in the freezer. I just made simple things to get through the end of last week. I'm down to just five or six packages of meat in the freezer that I'll be using up before I start stocking up again.
Sunday - Chili with all the fixin's, cornbread
Monday - Chili dogs, fries (freeze any remaining chili)
Tuesday - Lemon pepper Tilapia, yellow rice, green beans
Wednesday - Fish tacos (using up leftover Tilapia)
Thursday - Chicken Marsala, angel hair pasta
Friday - Leftovers
Saturday - Italian Wedding Soup

I learned how to make Italian Wedding Soup many years ago from watching my father in law make it. This recipe is about as close as you can get. Try it, it's so delicious! Oh and if you can't find Acini De Pepe pasta (my grocery store doesn't carry it) use pearled couscous instead.
Since I haven't posted much this week I'll add that my fur babies are all still doing well. Thanks again for all your thoughts, kind words, and prayers. Things are going nicely with reopening the book shop too. I'm having my third sale tonight.
