Weekly Menu Plan

It's so nice to get back to menu planning this week! My fridge and freezer are so empty now between having to throw away everything in the old fridge and using up all the meals I had stored in the freezer. I just made simple things to get through the end of last week. I'm down to just five or six packages of meat in the freezer that I'll be using up before I start stocking up again. 

Sunday - Chili with all the fixin's, cornbread

Monday - Chili dogs, fries (freeze any remaining chili)

Tuesday - Lemon pepper Tilapia, yellow rice, green beans

Wednesday - Fish tacos (using up leftover Tilapia)

ThursdayChicken Marsala, angel hair pasta

Friday - Leftovers

Saturday - Italian Wedding Soup

I learned how to make Italian Wedding Soup many years ago from watching my father in law make it. This recipe is about as close as you can get. Try it, it's so delicious! Oh and if you can't find Acini De Pepe pasta (my grocery store doesn't carry it) use pearled couscous instead.


Since I haven't posted much this week I'll add that my fur babies are all still doing well. Thanks again for all your thoughts, kind words, and prayers. Things are going nicely with reopening the book shop too. I'm having my third sale tonight.     1. This time of year we tend to eat more basic meals. It's still really too hot for it but we are craving nice comfort foods. We'll just have to turn down the AC a bit lol!

  9. I'm making chili for today, too. It's a cloudy, cold day in NEO, and it's a perfect dinner for that kind of weather.

    I'm glad things are returning to Routine around your place. That's so comforting after a tough run like you've had.

We'll be eating basic and comfort foods, and no doubt much will go in the freezer in single portions for myself, or when my daughter is home on break for lunches, or if I can freeze a second meal's worth even better. I've ever made Italian wedding soup-I think I may have had a canned version, but I am sure it isn't even a pale comparison to homemade.

  15. YUM to it all! Since my taste-buds are seasonally-inclined, I've held off making chili until the mercury drops. (Tho' the very thought of it's doing a number on my imagination!)

    1. I normally do the same. It is still so hot here but we have just been craving those cooler weather foods. We might have to turn our AC down a bit after eating like this in hot weather lol.

      I do take book requests Myra. Just let me know if there's anything you are looking for and I'll do my best to find it as soon as possible. Of course I'm not getting out and about to go book shopping as I did previously but I do have hundreds and hundreds of books already in stock too :)

  22. Love seeing your menu. Need some meal planning inspiration. I had chili today, so we're on the same wave length. I'm thinking of a white bean and chicken stew, which is great to freeze.

  23. Good to hear your fur babies are holding their own! We need to use up freezer meals also. I hear there may be shortages again. I have to do a pantry inventory and see what I am missing:(

    1. I try to make a new meal out of leftovers whenever possible and if there's still leftover after two meals I use stash the rest away for quick heat and eat meals from the freezer :)

  32. I love good soup. I don't eat canned, too much salt.
    I made lentil soup a couple weeks ago for the family, they ate the whole big pot in two days.

    1. Same here. Not only do canned soups have too much sodium but they suck too lol. Homemade is the only way to go when it comes to soup. I love lentil soup too, I imagine yours was delicious if it got eaten up that quickly. Thanks for stopping by the visit :)
