Weekly Menu Plan

Sunday - Brunch: Bagels with cream cheese and smoked salmon
               Dinner: Grilled babyback ribs, corn on the cob, coleslaw
               Dessert: Rice Krispie Treats

Monday - Leftovers

Tuesday - Chef salad

Wednesday - Tortellini with light pesto, asparagus, and roasted tomatoes


Note: I serve this warm for dinner and use the leftovers for a cold pasta salad for lunch or side dish - great both ways!

Thursday - Empanadas (from Saturday's cook and freeze day) with a side salad

Friday - Grilled chicken breasts with leftover tortellini pasta salad

Saturday - Waldorf chicken salad lettuce wraps (using leftover chicken)

  1. We had barbecued chicken yesterday. Today we are having chicken and salad. We’ll have chicken for sandwiches tomorrow. I love the days when there isn’t much cooking!

    I especially like the idea of asparagus with the roasted tomatoes. I will have lots of tomatoes ripe soon.

    1. Good morning Marie. Sounds delicious! I agree, I generally plan my menu with and idea to cook two or three times and make enough to stretch the main dishes into new meals for the week. It makes cooking a breeze! The asparagus and roasted tomatoes go great together, give it a try. Have a great week :)

  3. Today's brunch sounds wonderful! I've not thought of it in years, but my dad used to love cream cheese and lox. I know it's technically not the same thing, but I might have to put that on my list of "Things To Do Before I Die." (*smile*)

    1. Yep, it was something my dad loved too and it's also something my husband loves as well. Smoked salmon and lox really aren't all that much different, in fact I've read that most brands labeled as lox is actually just smoked salmon. Have a happy Sunday Myra :)

    1. Yep, I had so many! I liked blogs with specific themes back then and they got a lot more followers that way too. I had a main blog, and then the food blog, a gardening blog, a family blog, a photography blog, a health and fitness blog, Fly Lady inspired challenge blog and more lol. I was also the admin for two group blogs where a different person was assigned to write each day. One was a motivational blog the other was food themed. Blogging was a big part of my life back then. I would love to hear more about your experiences with blogs over the years too :)

    1. Hi Ginny. Is there anyone who doesn't love Rice Krispie Treats? My husband was on a bit of a cereal kick for a while and now I have a big box sitting in the pantry and he's off his kick. I figured why not make some and grabbed marshmallows the last time I went to the grocery store. I'm looking forward to them! Have a great week :)

  7. I guess I'm a fly by the seat of my pants gal..haha...
    I rarely know what I'm going to make a few days from now...
    Tonight it's clean out the fridge time...a little bit of this and a little bit of that.
    Tomorrow it will be ribs and corn on the cob ...since it's the night we put out the garbage...bones and corn cobs are so stinky that I like to have them go out immediately...I know...I'm strange (:0)

    1. Hi Sue. That's not strange at all. I don't usually plan around garbage day but I do keep a bag in the bottom of my freezer to stash away garbage that gets too stinky, and then just take that out of the freezer on garbage night. It works. Thanks so much for stopping by :)

  8. It's so hot here we are just making light meals or bringing in food. Last night we had salads from Salad and Go. Do you have that fast food chain in Florida Martha? The salads were delicious! Tonight we are doing steaks with leftover veggies from Friday night. Your menu is yummy as usual!

    1. Thanks and I know exactly what you mean Betty, there is just no way I could eat a big, hot, heavy meal in the summertime. It's brutally hot here too. We don't have Salad and Go here, after you mentioned it I got curious and looked it up. Looks like they are strictly an Arizona chain. Glad you enjoyed! Steaks and veggies sound fantastic too, can't go wrong with that. Have a great week! :)

  9. I only plan two or three days in advance and I've got several leftovers to use up. Tomorrow is veggie burger night and salad and Tuesday I'm using my leftover Mexican casserole. I ate a lot of stews in the winter, but definitely too hot now.

  10. I have discovered that your Empanada is like our Pasty or Hand Meat Pie (Michigan Pasty) My Fathers Mother was from Michigan and made them...meat, carrots, potato and rutabega in a crust.
    Well lets see, tonight we had Naan Bread Pizzas, Monday is Freezer ...pick what you want from frozen meals in the freezer, Tuesday is Pork Burgers and Salad, Wednesday is Ham something not sure yet but I have ham to use up. Thursday is Spaghetti, Friday is Pulled Pork Quesedeas and Saturday is Pork chops on the grill.

    1. Yep Patsy or Hand Meat pie is very similar, the filling varies at bit but other than that they are basically the same. Your menu this week sounds great and you just reminded me that I have ham in the fridge that I need to stash away in the freezer. Maybe I'll make some ham and egg biscuits for breakfast tomorrow and then add some more breakfast sandwiches to my freezer stock too. I don't have much else going on these days so might as well!   12. We just had plain rice porridge with some home grown veggie and salted egg and fish. Tomorrow I will boil soup. Have a wonderful day.

  13. i have saved the last 10 of your post to look through for healthy recipes, i am so tired of what we eat. since we just met, you might not know in January of 2017 I changed my eating habits and gave up sugar, none since then. and trying to eat healthy foods and not the ones i love.... it looks like you have some i would like. thanks for all your comments and prayers
