Cheesy Ham and Egg Biscuit Bake

Hi blog buddies! Yes, I did it again. I pulled the unannounced disappearing act. Once again, it wasn't intentional. On my last post back in November I had mentioned that my youngest son had just moved back home from New Mexico. Of course we were so happy he came back, but my office along with my one and only computer were invaded full time by 'The Gamer' until he found work. Now I can get to my computer during his work hours at least.

The holiday season has come and gone since my last appearance here. I hope all of you had a great Thanksgiving, Christmas, and kick off to the new year!

I started a new food Instagram account back in November. You can take a peek on the widget on my right sidebar. That account has taken off quickly in the short time I've had it. I want to give it another boost by linking my blog and posting the recipes here. It will be good motivation to keep me blogging too. Let's get started shall we!





Cheesy Ham and Egg Biscuit Bake

Ingredients

1 package refrigerated biscuits

1/2 pound thinly sliced deli ham

6 eggs, beaten

1 cup shredded cheddar cheese

3/4 cup milk


Directions

Preheat oven to 350. Grease a 9 x 13 baking dish. Mix beaten eggs, milk and shredded cheese together. Cut each biscuit into quarters and add to mixture. Pour into baking dish, weave slices of ham around each biscuit piece. Cover with foil and bake for 30 minutes, then uncover for another 20-30 minutes.

Notes: This makes a casserole suitable for a large family. Ingredients can be cut in half for a smaller casserole. This makes a great no fuss holiday breakfast too. I had a small amount of leftover baby spinach in the fridge that I threw in too. This can work with all different substitutions or additions.

    Where, exactly, was the Gamer in New Mexico? Not my favorite spot in the universe, but I did call it home (Los Alamos) for nearly 18 years!

I'm pretty sure you can create an account, view and even follow people and like their photos from your laptop, and I've recently heard if you are running windows 10 on your computer that there is a way to post photos too. You'd have to google it for more info. I would love to have you join me on there!
