Delicious Easy Salsa

This is a healthy and delicious salsa that I have posted in the past. Now that football season has arrived I thought it was a good time for a recipe repeat. This easy salsa will be making an appearance for our football buffets often. It's super simple to throw together, and makes a beautiful, colorful addition to any party buffet. You have to try it!


Easy Corn and Black Bean Salsa

1 can black beans (drained and rinsed)
1 can corn (drained)
2 cans petite diced tomatoes with the juice
1 can Hot Rotel with the juice
1 very thinly sliced green onion (or more to your taste)
1/2 cup chopped cilantro
2 limes (juiced) 
1-2 garlic cloves (finely minced)

Mix well and refrigerate until chilled, overnight is best. Serve with tortilla chips for dipping.

This recipe makes a medium spicy salsa. Some chopped Jalapeno peppers can be added if you prefer a hot salsa. The Hot Rotel can be omitted altogether if you prefer your salsa very mild. It's delicious with all variations!

  2. Fantastic idea! I've always seen it made with sweet bell peppers - which makes for a lot of chopping, so I may have to try this variation. I'll probably use fresh tomatoes though, since the garden is producing so many that I've got them coming out my ears!

    1. Definitely, it's obviously even better using fresh veggies! Just try to reserve as much of the juice from the tomatoes as you can.

  8. OMG that recipe looks amazing! What's Hot Rotel? Could I substitute something mild?

    1. You'll find the Rotel right by the canned tomatoes in the grocery stores. It's a combo of chili peppers, tomatoes, and spices. It comes in original, hot, and mild so you could just get the mild :)

  9. Hard to believe I've never made my own salsa! I prefer mine medium zesty, while everyone else in the house likes mild. Your recipe looks fabulous.
