The heat is on!

I'm not just talking weather but in life in general - busy, busy times!

Last weekend was my oldest son's high school graduation. It was planned for Friday night but got rained out. We really desperately needed the rain, but did it have to finally arrive on graduation night?! Oh well, we made it through.

Graduation was held on a soggy, humid, overheated football field on Saturday morning instead.


One good thing about having graduation the next day was the after graduation party plan went from a dinner for 12 that probably would have cost several hundred dollars to a luncheon at the same waterfront restaurant that was half the cost  :)


Of course I still had tons of teens in and out over the rest of the day at home, but it's all pool times and simple food for this time of year. A sub platter that evening with a bag of chips and a cooler full of soda did the trick - easy!


Things at work have been so crazy! I feel like I'm sleepwalking by the time I get home in the evening. I'm thankful for the kind of cool, simple, summery foods we like to have at this time of year. Tonight I used some leftover chicken to make a nice Chicken Waldorf Salad...

Ingredients:

2 cups leftover shredded chicken
1 cup of red grapes, halved
1 sweet apple, cut in small chunks
1 lemon, juiced
1 stalk celery, chopped
1/4 cup chopped walnuts
1/2 cup mayo

Toss chopped apple and lemon juice. Add all other ingredients and toss lightly until well mixed. Chill and serve on a bed of lettuce with or on croissants, or really great in a wrap too.



This made a very filling, yet cool and refreshing summertime meal.

  9. That is a huge milestone in your life and his to be sure. Congrats to you both! Here in northern Ohio, we have cooled down a bit and after a very hot Memorial Day weekend it is in the 70's here for a few days. The chicken salad you made sounds wonderful and a perfect thing to have in hot weather. Hopefully soon things will be calming down a bit for you!
