Meanwhile, I know you have been sitting on the edge of your seat wondering what happened with the zucchini from my Z post ;) Well, here you go...
Day 1 - House full of teens that messed up my fancy stuffed zucchini plans. I did grill the zucchini but stuck it in the fridge for stuffing for dinner the next day.
Day 2 - Late getting home from work and errands, relieved I didn't have to worry about an A-Z post for the first time in a month. Grabbed a rotisserie chicken at the deli and a six pack of beer, made stove top stuffing and canned green beans - who cares about zucchini, I just wanted to relax!
Day 3 - That freakin' zucchini is still in the fridge. I better do something with it before I have to throw it away. *digging in the fridge to throw something together*
For those of you who were around when Seaside Simplicity was just a food blog, you know the word simplicity represented easy shortcut meals from an overworked mom. I'm working on making simplicity a way of life not just a way of cooking, but for now here's another one of those simple but delicious meals...
Simple Stuffed Zucchini
1 pound cooked spicy ground sausage
1 cup prepared packaged stuffing
Cut zucchini in half, scoop out center of each. Brush zucchini halves with olive oil and grill face down medium high heat for about 5 minutes.
Meanwhile, cook ground spicy sausage, drain. Combine sausage with 1 cup of prepared stuffing.
Stuff the zucchini halves with the sausage/stuffing mixture. Bake at 350 or place back on grill until golden brown and zucchini is tender. Eat and enjoy!
It may not be fancy but it sure was good. Cheers!

Seems like the zucchini isn't getting any love and the cat never stops!..haha

I have to tell you; its kind of nice not seeing a whole lot of posts on my Dashboard of everyone from the challenge. I'm going to eventually return to my 1-2 posts a week, right now I have lots of things going on my head to write about; waiting to see how a situation plays out for a family member, might blog about that, discretely of course :)

It is nice really in a way but seems weird too, I had already gotten into the habit of the daily posting - but of course I had to let other things go in order to keep up, not something I could continue on a regular basis even if I wanted to. Hope things are all ok with the family member you are talking about. I'll be watching your blogs!
DeleteYes, after the challenge which I had completed early January, I found it hard to write, so I wrote a poem from my latest book about the Olynpics. I have been so busy commenting I haven't had much time to write anything new.

DeleteIt looks and sounds wonderful! I love zucchini anyway. I've had stuffed peppers and cabbage but never squash, so this was a pleasant surprise. Stuffing is always good. I love it too. Great combination! Hope you continue to get some extra blogging time in and not just on the weekends. I post daily and never get tired of it. Have a wonderful Thursday!

ReplyDeleteI'm usually pretty good about using up my veggies right away, it was the change of plans to feed a bunch of teenagers at the last minute that prolonged making the stuffed zucchini the same night - and it was over cooked besides after grilling and then stuffing and baking, but still good :)
DeleteI have to say, I laughed out loud when I read your "Day 3." I do this to myself CONSTANTLY! Sometimes things just don't go as planned and I feel so self-obligated. I'm my own biggest pain in the kitchen!
ReplyDeleteThis looks absolutely delicious and budget-friendly too! I always grab the Stove Top stuffing that's in the Redcued Grocery section at the store. It's always like $1.50 for a box just because it's a little dented. I'm ABSOLUTELY going to try this! I can't wait.
