When I decided yesterday to use zucchini as my Z post, I thought it would be perfect to post a delicious recipe with some nice photos of a delicious meal that included stuffed zucchini. Little did I know I was going to have a bunch of teenagers over when dinnertime came around. So, instead of a beautiful meal I show you hot dogs for last night and zucchini ready to be stuffed for tonight's dinner ::fail::

DeleteAs a kid, I hated zucchini (and onions and tomatoes) but as an adult, I love it! Still hate onions and barely tolerate tomatoes....but zucchini....I could fill my veggie garden with it and be very satisfied!
ReplyDeleteI was the same way, even worse actually. I wouldn't eat any veggies besides corn and potatoes until I was in my mid twenties!! These days I love all veggies and actually eat a mostly vegetarian diet. Zucchini is definitely one of my very favs :)

DeleteWe take peppers, zucchini, squash and portabellas(sp?) and toss them with fresh garlic, olive oil and maybe a tad of balsamic and grill them all the time! Yum! I will be trying this one as well. We made it through the challenge. My post is extremely lame because I am over the top busy and not feeling well at all today. I will be back to my usual rambling posts after today.

ReplyDeleteI am very interested in the stuff zucchini recipe so I will have to check out that blog. I make zucchini chips (baked in the oven)that I love. I also make zucchini latkes with a tzatziki sauce. I guess what I'm trying to say is I LOVE ZUCCHINI:)
