I find it so hard to believe it's June already! The kids are almost finished with school and the weather is really heating up here in Florida. Can you guess what the summer recipe round up theme will be?
Ah yes, nice cool salads! Sounds perfect doesn't it?
This super simple salad is simply Boston lettuce (or I sometimes use baby spinach) topped with a combination of chick peas (drained and rinsed), edamame, and dried cranberries. I use a splash of plain balsamic vinegar as a dressing. This salad has zero saturated fat, it's packed with protein, very healthy, and with the combination of all the different flavors, colors and textures it's like a party on a plate! It's so delicious, hope you'll give it a try!
