| Lime Herb Chicken with Baby Taters |
It was a quick and easy meal...
I marinated the chicken strips in a combination of Italian dressing and lime juice for an hour or so and then seasoned them with a garlic and herb seasoning and pan fried them in a little light olive oil along with some thinly sliced green onions and fresh minced garlic.
Meanwhile I boiled the adorable tiny baby potatoes. Once they were fork tender and the chicken was cooked thoroughly, I removed the chicken to a hot platter, drained the taters and tossed them in the pan I had cooked the chicken in - with more minced garlic, butter and lots of parsley.
I served the chicken with extra lime, and garnished with additional green onions.
We loved the tangy chicken and the baby potatoes were so sweet - and absolutely delicious tossed with the garlic, butter, parsley and all the deglazed goodness. I served this with a salad and fresh homemade iced tea. Perfect summer meal!

Martha, great meal, I love these kind. I just bought some baby potatoes and my husband just loves parsley potatoes...now I don't have to ask him what he wants (I always know his answer anyway) Have a great weekend!
