You know I'm all about simple cooking - these delicious corn muffins are another really simple half homemade treat. I had some lovely little Serrano peppers a friend brought me from her garden, just perfect for a batch of spicy corn muffins to go with dinner this evening.
Spicy Corn Muffins
(makes 12)
2 boxes corn muffin mix
2 eggs
1 can corn (drained)
1/2 can creamed corn
2/3 cup milk
Thinly sliced hot peppers
(leave the seeds in for a good kick of hot and spicy)
Mix and fill muffin cups 3/4 way full
(leave the seeds in for a good kick of hot and spicy)
Mix and fill muffin cups 3/4 way full
Bake at 400 degrees for 15 minutes or until done
.



These would be my kind of muffins.
