Loaded Baked Potato Salad

Want a different way to use up your leftover baked potatoes? I made this salad a couple of weeks ago just experimenting with leftovers. I was really in the mood for some potato salad and just happened to have some leftover baked taters in the fridge - I thought why not?


I peeled and cubed 2 large baked potatoes, mashed 2 hard-boiled eggs, added 2 tbsp mayo, 2 tbsp sour cream, 1 tsp Dijon mustard, salt, pepper, and mixed it all together. I refrigerated the salad and then when ready to serve I topped it with shredded Colby and Monterey Jack cheeses, crumbled bacon, and thinly sliced green onions.

This salad is definitely going to make it on the Easter buffet! Any fun new recipes going on your Easter menu this year?

  4. I've always been a fan of potato salad, but have always been hesitant to try to make one myself. With your recipe, it seems easy enough to do...but the result looks simply amazing! I can almost imagine how delicious it tastes!
