Simple Caprese Salad
Caprese salad is one of my favorite things and it's so easy - fresh mini mozzarella balls, halved ripe grape tomatoes, a couple torn basil leaves, all drizzled with a little olive oil and some fresh ground pepper. My son made it at school in his Italian class recently where they also added a little balsamic vinegar. I was hesitant but decided to give it a try - Delizioso!
This made a perfect lunch served with oven toasted beer bread (minus the cheese from the recipe only because I made it specifically to serve with the Caprese salad - trust me, it's great either way)!

Martha - great to see your post! Love Caprese - I happen to have eaten an identical salad for breakfast today I have no hang-ups about eating breakfast appropriate foods and I'm swimming in ripe tomatoes! Hubby, however, had cereal. :)

ReplyDeleteCaprese salas is one of my favorites. Next day after you prepare it is the best.
