- 1 can black beans (drained and rinsed)
- 1 can corn (drained)
- 2 cans petite diced tomatoes with the juice (or 4-6 fresh tomatoes)
- 1 can Hot Rotel with the juice
- 1 very thinly sliced green onion (or more to your taste)
- 1/4 cup chopped cilantro
- 1 lime (juiced)
- 1-2 garlic cloves (finely minced)
This is one that will definitely be making an appearance at my house often, especially for any parties, buffets or pot lucks I attend! It's healthy and delicious - the best of both worlds!

This has become my favorite salsa, even more than pico de gallo or traditional tomato based salsas.
